Not only is Miss Dina a very talented photographer, she is also an accomplished chef! Cooking has always been one of Miss Dina's favorite hobbies. She enjoys making everything from Chicken Picatta to pickles! Below are some pictures from the first batch of pickles this year along with the recipe!!

Home grown dill and cayenne peppers

Spicy Dill Pickles Recipe

Ingredients

24 pickling cucumbers (kirbys), each between 3 and 4-inches long
6 small bunches fresh dill
1 small yellow onion, peeled and thinly sliced
12 cloves garlic, peeled and crushed
6 dried small red chili peppers
1 1/2 teaspoons black peppercorns
3 cups water
3 cups apple cider vinegar
1/2 cup pickling salt
1/4 cup granulated sugar

Directions

Place the cucumbers in a large bowl and cover with cold water. Refrigerate for at least 6 hours or overnight.

Sterilize 6 pint-sized jars and 6 lids in a hot water bath according to the manufacturer's instructions. Divide the dill, onions, garlic, peppers and peppercorns among the jars. Drain the cucumbers and tightly pack into the jars.

Bring a large pot or canner of water to a boil.

In a medium pot, combine the vinegar, water, salt, and sugar, and bring to a boil. Boil for 2 minutes to dissolve the salt and sugar.

Pour the hot liquid over the cucumbers, leaving a 1/2-inch of headspace at the top of each jar. Tap the jars on the counter to dispel any air bubbles, cover with lids and rings, and seal tightly. Place the jars in the pot or canner of boiling water and process for 15 minutes. Remove carefully with tongs and when cool, store in a cool, dry place for at least 3 weeks before opening.

Note: If tap water in your area is hard or high in mineral content, use bottled water to prevent discoloration of pickles.

...Or your friend's daughter. Dina always wanted a little girl to take to work on days like today so she borrowed her friends daughter for the day! Ashlyn had a busy day of assisting Miss Dina in the Studio with sittings; giving her usual assistant a nice break. (Whew!)

Miss Dina has known Ashlyn's mother since her high school days at Godby High. Ashlyn is an 8th grader at Fairview Middle School and aspires to be a photographer or a police officer one day. She did a great job today and we hope she comes back soon! Here is Ashlyn hard at work....

Allen Mortham III

Allen, 9, is a third grader at Conley Elementary. He loves to play sports, especially baseball and football, and loves fishing and hunting with his dad and Grandpa. Allen loves to cook and makes great pancakes! He loves to play with his air-soft gun, going to the beach, and riding his bike with his friends. He is the sweetest, kindest boy – who loves to make his sister laugh. Oh, and he loves taking pictures!

Sofia Mortham

Sofia, 6, attends Conley Elementary and is a first grader. She was born on the Fourth of July and she’s a real firecracker! She’s the daredevil of the family and is not afraid of anything (except maybe the dark). Sofia loves the beach, swimming, playing with Barbies, and riding her scooter. If given a choice, she would probably want to live under the sea. She’s a fun-loving, free-spirited girl with a contagious laugh and soul-full eyes.

click to enlarge - comments welcome!Julian's favorite foods are sweet potatoes, blueberries, yogurt, pineapple, and ham, peas, and bread! His favorite books are "Danny & the Dinosaur", "Spot" the puppy books, and his nursery rhymes book. He LOVES and has a fascination with sports.

In fact, his favorite toys are his basketballs and soccer balls. He also LOVES his beach ball. He can't stand the sight of neatly stacked blocks, and loves to knock them down. His favorite songs are "Old MacDonald", "Twinkle, Twinkle Little Star", "Baby Bunting" and "Families Can Be Together Forever."

He loves going outside and discovering all the seemingly small, beautiful things there are too see in this world, namely birds, ants, and airplanes in the sky. :)

The COOLEST thing about Julian, is that his Mommy was one of the first babies on my Baby Plan! It is so special to me to be able to follow our families through the generations! Way to go Julian and Kimberly! We love you! Miss Dina
